Now that Spring is officially here it’s time to take advantage of the fresh fruits and vegetables that will be in season! We want to kick off with a recipe that screams Springtime and that is bright and vibrant!
Strawberries are very low in saturated fat, cholesterol and Sodium. It is also a good source of Folate and Potassium, and a very good source of dietary fiber, Vitamin C and Manganese.
Ingredients
1 bunch of fresh spinach
1 cup of fresh sliced strawberries
1/2 cup of crumbled Gorgonzola cheese
1/2 cup raw pecans
1/4 cup balsamic vinegar
2 tablespoons honey
1/2 cup of olive oil
salt and pepper
Instructions
It is very simple!
Combine the spinach, strawberries, Gorgonzola cheese, and pecans in a large bowl.
Stir the balsamic vinegar and honey together in a bowl; slowly stream the olive oil into the mixture while whisking continuously. Season with salt and pepper. Drizzle the dressing over the salad just before serving.
You can also save the leftover dressing in a Tupperware for future salads or even a marinade!
